There are foods I know without a doubt will be in Heaven.

Cotton candy.
Biscuits from the Loveless Café.
Potatoes served every way imaginable.
And fruit.

I remember climbing the peach and plum trees in my grandpa’s orchard in Jonesboro, Texas, in search of the perfect snacks for the lazy summer days on the farm. Grandma would make jams and cobblers, and would even pickle the peaches in a sweet-tart concoction full of cloves and cinnamon. They were strange and amazing (and learning to make them is now on my list of things to do).

Fruit is just happy. The colors and flavors smile brightly. And fruit understands the beauty of playing nice. Pineapples, grapes, strawberries, nectarines, blueberries, and plums are just as tasty hanging out together as they are by themselves. Fruit could honestly teach us a thing or two about kindness and friendship.

Just hanging out with fruit is kitchen therapy to me. In honor of its sweetness, I thought I’d share one of my favorite little things – a yummy sauce that’s crazy-simple to make (it takes less than a minute to prepare).  I used it as a tasty glaze on chopped fruit or spoon it lightly over ice cream – and it’s even a great base for smoothies. And while I’m sure canned apricots won’t be used in Heaven, they work exceptionally well here on earth – so don’t be afraid.

APRICOT VANILLA COULIS

 

1 can apricots in syrup, drained (though you can buy the “light” variety, the good old-fashioned “in heavy syrup” ones work best)
¼ cup honey
1 t. vanilla (Mexican vanilla is best)
½ t. cinnamon
Dash of freshly grated nutmeg
Optional 1/4 t. lavender (it really does add extra joy)

 

Place all ingredients in a blender or food processor and puree. Yes, that’s it. You’re done. Enjoy!
