As I write this, the sun is rising over volcanos in Guatemala. In the distance, Fuego (one of the largest and most active) occasionally greets the land with a flume of smoke. The lake below me is still and peaceful. It’s a beautiful balance to the flour-dusted day that awaits.

We are at Eagle’s Nest, a children’s home, school, and church that sits high on a mountain overlooking the villages of Solola and Panajachel on Lake Atitlan. My team, an incredible group of folks from Austin Christian Fellowship and Hill Country Bible Church, is doing activities with the sweet kids here – and two workshops at a special retreat for local women. We’ve got a “spa” where the ladies are getting hand massages and manicures, and a “bakery” where women are getting to play with sugar and spice.

So what do you teach women who live in houses and huts? What ingredients might be found in both grocery stores and in open air markets? What might be baked in electric ovens and wood stoves?

The answer? Pie! That’s right. Beautiful, simple pie. I’m thankful for Susie Davis’s recipe for No-Roll Pie Crust. It’s “facile, rapido, y deliciosa.” And now it’s gone global. You can see it in English here, but in case you’d like to be adventurous, here it is en Espanol.

Base de Tarta

 

1-1/2 taza de harina

2 cucharadas de azucar

1/2 cucharadita de sal

1 cucharada de leche

1/2 taza de aciete

 

En un molde de pie mezcla las ingredientes secos. En una taza de 1 un litro, mezcla los ingredientes mojadas. Usando un tenedor todos o usar sus dedos para mezclar bien. Presione en el molde de pie con la forma del pie molde. Puede rellanar con fruta y azucar o hornear 20 minutes hasta la mezcla esta bronceada y despues rellanario. Horno 172 c.
