I have a confession to make. I promise, it’s not going to be anything gloomy or awkward. If you follow me on Facebook or Instagram, you’ve likely already read my confession about Thanksgiving (how it’s a beautiful-awful day for me), so you know that my goal this year is to blend Thanksgiving and Christmas into one long, hopeful holiday called Christ-giving. That way, there will be plenty of opportunity to invite folks to the table at CasaRock. Yes, you’re invited. Remember, good food and free wifi await. And all are welcome. Whosoever, come.

I’m still collecting recipes from all my #kitchentherapy posts – and this one is all about breakfast. I’m also collecting pictures that melt my heart, and this one of Sawyer when he was a little guy is doing just that.

Oh wait, I forgot the confession.

I don’t like breakfast for breakfast.

I’d much rather have it for dinner. In fact, here at CasaRock, we call it BfD. When it’s served, it’s complete with biscuits and sausage gravy, brown sugar bacon, eggs (always scrambled), fresh fruit, and some sort of incredible sweet thing. SWEET TREATS

Bun in the Oven Cinnamon Roll Biscuits

Of all the recipes I’ve ever posted, this one takes the cake. Or really, takes the everything. More than 15,000 people have peeked and bookmarked and turned the easiest biscuit recipe into the best cinnamon rolls. Oh, and Tyler (the little bun in the oven) loves these.

Now, should you want to make these as biscuits only, the recipe is super-simple and delicious. It’s linked in the post. They’ll go great with gravy. Or with the fried apples and brown sugar bacon recipe…

 

Krispy Kreme Casserole

Yes, donuts turned into a casserole is a thing – and a good thing at that. Now, we call it Monkey Donut Casserole (because Monkey Donuts are where all the cool kids go to get their special treat when they stay at GiGi and Poppa’s house), but you can call it whatever you’d like. No matter what, you’ll call it “yum.” I even share how to turn a donut casserole in to a DESSERT. Pretty cool, huh?

Fried Apples and Brown Sugar Bacon

If you’ve never had fried apples and bacon on a fluffy biscuit before, you’re missing a true deep South treat. It was one of my mom’s favorite breakfast treats. Her recipe sounded something like this: “Get some red delicious apples. They’re not good for eating, but they’re great for frying. Slice ‘em up, and put ‘em in a skillet. Add a few dobs of butter. Sprinkle a bit cinnamon, nutmeg, and cloves on the apples, to your liking. And cook them down on low heat until they are soft. Put a heap of them on a biscuit and eat.” My recipe for both the apples and the brown sugar bacon (which is cooked in the oven – praise hands) have measurements to make them a bit easier to follow. Brown sugar bacon is also good on a BLT or a Club sandwich – or stacked high on a plate for your snacking enjoyment.

 

Apricot Vanilla Coulis

If you love fresh fruit, you’ll adore this super-simple sauce that is a perfect addition to peaches, plums, grapes, apples, and more. Buy whatever’s fresh at the market – then blend up a batch of apricot vanilla coulis and serve together!

Here’s a bonus recipe for you – a breakfast fruit salad I have made time and time again with rave reviews: 2 Granny Smith apples, cored and diced, 2 cups green seedless grapes, halved, 1/4 cup chopped pecans, 1/2 cup finely chopped celery. Mix ingredients, and add 1 cup vanilla yogurt and 1 t. cinnamon. Toss together and serve.
